I'm not typically one to eat breakfast food for breakfast (I'm a breakfast for dinner kind and vice versa of gal), but while walking back from a morning run/walk/hobble a few weeks ago, I somehow developed a craving for an omelette. I had some leftover mushrooms from when I made the Creamy Mushroom Soup and Swedish Meatballs (to be published 8/8/16), and scrounged around in the fridge for a few other simple additions. My exorbitant love of mushrooms and garlic was satisfied for the day, and it was simply delectable. I must say that I was quite pleased, and I've whipped up the same recipe for post-workout breakfast a handful of times since then.
By the way, this happens every time I step foot in the kitchen. Every time. Baby just wants some love... at the most inconvenient times. (#lifewithcats, am I right?)
