Easy Mushroom & Egg Breakfast Scramble

Howdy, Hanlin Family! I promise you this is much more delicious than it looks. By golly, it's difficult to photograph scrambled eggs.

I'm not typically one to eat breakfast food for breakfast (I'm a breakfast for dinner kind and vice versa of gal), but while walking back from a morning run/walk/hobble a few weeks ago, I somehow developed a craving for an omelette. I had some leftover mushrooms from when I made the Creamy Mushroom Soup and Swedish Meatballs (to be published 8/8/16), and scrounged around in the fridge for a few other simple additions. My exorbitant love of mushrooms and garlic was satisfied for the day, and it was simply delectable. I must say that I was quite pleased, and I've whipped up the same recipe for post-workout breakfast a handful of times since then.

By the way, this happens every time I step foot in the kitchen. Every time. Baby just wants some love... at the most inconvenient times. (#lifewithcats, am I right?)

Creamy Mushroom Soup Recipe

Hey there, Hanlin Family!

I don't know about y'all, but I love me some creamy mushroom soup. Every Wednesday, the café down the hall from where I work has mushroom bisque as their soupe du jour. So rich and creamy and delicious. I rarely eat down there, but that soup is always my first choice if I ever happen to be working late on a Wednesday. I found myself craving that mushroom soup recently, so I decided to make some for dinner, and was very pleased with how it turned out. Fortunately, I ended up having enough left over to separate into portion-sized containers and put in the freezer for later.

some good left

Every morning, like everyone else in the world right now, I wake up to another tragedy.

More people dead. Another ludicrous, senseless act of violence that with any thought on the part of the perpetrators, could have just... not happened. All the evidence suggests that the world believes violence is the only way to solve any problem now. I try to keep this blog a happy place, ignoring the insane politics and economics and violence of the world, and try to bring a little joy to the folks who come here. But these things start to weigh on a person.

"What can man do against such reckless hate?" How are we supposed to react? What are we supposed to do?

Happy Thursday, Hanlin Family!

I usually only write something for Mondays, but, well... I've been doing some pondering about this here blog of mine. There are a few ideas rolling around in my head, including posting on both Mondays and Thursdays, depending on the week. We shall see. Anyway.

Welcome to the first What I Eat in a Day on this blog. I mentioned this idea in a video blog a few weeks ago, so I figured I'd haul off and write one and see what y'all think of it. Hopefully you'll come away with a few new ideas for easy daily meals! Let me know what you think, and if you'd like to see more. Maybe a video next time?

Breakfast (7:15 a.m.)
broiled Alaskan salmon (recipe here) + overeasy egg cooked in coconut oil with a little salt & pepper

Once a week, I pick up a giant filet of fresh Alaskan salmon, broil it as I usually do, and eat it with an egg or two every morning until it's gone. This is one of my all-time favorite and most satisfying breakfasts. My roommate and I usually walk down to the gym around 6 a.m., and by the time we're finished with our various exercises, I am completely ravenous. Both of these things are excellent on their own, but when you break the fresh hot egg yolk over the fish and let it seep into all the little crevices... it's just amazing.
