eat less more often - i can do that {recipe}

Eat less more often. So say many health "experts" about methods of staying fit and/or losing weight. So, that's what I've been trying to do, and not only do I feel stronger, lighter, and more energetic, but I now have a handful of fantastic one-person recipes to pass on to y'all! All of which are absolutely delicious, and some of which I figured out/invented all by my lonesome! How I love food experiments.

Here's one of my most recent favorites: blackened pan-grilled shrimp on lettuce with strawberries. Much less weird than it sounds, I promise you. Just look at the beauty.

catholic radio and artsy friends ~ 7qt (vol. 41)

HelLO there, friends and readers! Happy Friday! By now, you've probably noticed the new art on my blog banner... all thanks to my lovely artist and photographer friend (both in-real-life and otherwise), Mary B. L. of The Fraying Scarf. Her older sister, Josie, took my senior portraits back in '12. I tell ye, this family is ludicrously talented. Last Wednesday (or was it Thursday?), I hailed my artistically inclined friends via my personal page on the Book of Face, and sent a few of them an idea that had been floating around in my head for a while, but one I couldn't make a reality on my own, thanks to my astonishing inability to draw anything other than inanimate objects and stick figures. And, Mary sent this image back:

ordinary, beautiful days

Over the past few weeks, I've come to realize the stress and tension creeping into my life. Actually, the stress and tension has been forcing its way past my barricades like an extremely super-charged Grond the Warhammer. From dawn until dusk I'm either interning or petsitting or driving back and forth between the two... not that I'm complaining. Having work is a tremendous blessing. Just a little exhausting, though. (C'est partly why - you may have noticed - I haven't written anything of substance for quite a while.)

Welcome to Featured Blogger at Country Girl's Daybook. 'Twas a freezing Sunday morning, when I sat in the pew after Mass and glanced up to notice a familiar-looking blonde lady coming straight toward me with some of the cutest kids I have ever seen. 'Twas Jenna, a blogger friend I'm now blessed to also know in real life - I mean - IRL. That's what the cool kids say. Turns out, she goes to my church. (And to my favorite bookstore.)

Q: How did you first get involved with blogging, and what inspired you start your own?

I first started blogging when I found out I was pregnant with my first. I wanted a way to keep my family informed about the pregnancy because I hate repeating myself. But, I started reading other blogs and found out that blogging could be so much more. Then, evolution.

1. In an effort to stop snacking between meals, I've been trying to be as creative as humanly possible in other areas. Having something to do with my hands distracts me from joy-munching. Plus, I have so many ideas which have yet to come about, so I figured, why not try a few?

a lovely combination || bison + bruschetta {recipe}

Remember when I made the best bruschetta on the planet on New Year's Eve? Well, little did I know at the time it works as a wonderful topping for ground bison! Bison, as I have discovered through a reasonable amount of research and experiments with eating (yes), is much healthier than the average meat. It's lean, but a terrific source of protein, omega-3s, and all that good stuff I won't bore you with here. It's quite simple to make, which I greatly appreciate.

And, it's delicious.  Bam.

7qt ~ in which I sing at the end (vol. 40)

1. For the past week and a day, I've been working inventory for a small, darling, local Catholic bookstore, an entirely unique experience for me. I must say, I really enjoy spending my afternoons knee deep in Catholic books. My job consists of going through each category and their subsections (books, gifts, holy cards, etc.), and ensuring the records in the computer are accurate to what we have in stock. I'm beginning to know that store inside and out...

And, the list of books I'd like to read and/or buy has grown about 75 entries since Saturday.
